Our pizza dough rests for two full days in temperature-controlled fermentation drawers before touching the oven hearth. The slow rise develops open, digestible crumb structures, gentle sour notes, and distinct blistered crusts that never feel dense or hurried during busy evening services.
Pasta dough is milled from Italian durum wheat and farm eggs, extruded fresh each morning before the first lunch orders enter the kitchen. Fish and shellfish arrive chilled from regional coastal docks, cooked over clean flame with cold-pressed olive oil, fresh oregano, and charred lemons.
Good food demands unhurried afternoons, chilled carafes of Verdicchio, and no pressure to leave.
We built our dining room for long conversations that stretch into twilight, where bread breaks slowly and every plate arrives at the table exactly when it is ready.
